Red rice and White rice

Almost wild rice is colored because it contains a lot of tannin.

This is a special variety of rice, it’s called “Aka-Mai / Kodai-Mai” red rice.  It’s colored because of containing a tannin, a type of polyphenol.
It is generally unhulled.

is a common rice. 白米(はくまい) literally  “white rice”
・Gen-Mai
is a common brown rice, not a red rice. 玄米(げんまい) literally  “dark color rice”
