Metapenaeus ensis goes by many names in each regions of Japan.
These are Metapenaeus ensis delivered by my parents from their hometown Kagawa pref. near of Setonaikai Sea.
It’s a family of “Kuruma-Ebi” Marsupenaeus japonicus and so delicious.
I’m sure of that you will be very confused when looking for them in the market, because Yoshi-Ebi” goes by many names in each regions.
In Kyoto it’s called Shirasa-Ebi, this name is comparatively popular.
is a Metapenaeus ensis. 葦海老（よしえび） literally “Phragmites australis shrimp” * 海老 “shrimp”
is a Marsupenaeus japonicus. 車海老（くるまえび） literally wheel shrimp”, but it is uncertain what’s responsible for “車 wheel” name.
