Red Chili Shrimp

Metapenaeus ensis goes by many names in each regions of Japan.

These are Metapenaeus ensis delivered by my parents from their hometown Kagawa pref. near of Setonaikai Sea.
It’s a family of “Kuruma-Ebi” Marsupenaeus japonicus and so delicious.

Although they call this shrimp “Yori-Ebi”, Japanese common name is “Yoshi-Ebi”.
I’m sure of that you will be very confused when looking for them in the market, because Yoshi-Ebi” goes by many names in each regions.

Yori-Ebi, Akiba-Ebi, Ishizaki-Ebi, Ma-Ebi, Shiba-Ebi, Gasu-Ebi, Su-Ebi, Doro-Ebi, Mizu-Ebi and Moroge-Ebi etc.,  * Ebi means shrimp
In Kyoto it’s called Shirasa-Ebi, this name is comparatively popular.

・Yoshi-Ebi
is a Metapenaeus ensis. 葦海老(よしえび) literally “Phragmites australis shrimp”  * 海老 “shrimp”
・Kuruma-Ebi
is a Marsupenaeus japonicus. 車海老(くるまえび) literally wheel shrimp”, but it is uncertain what’s responsible for “車 wheel” name.
・Ebi Chili Sauce
is a dish name of Red Chili Shrimp. abbreviation “Ebi Chili” 海老チリソース(えびちりそーす)
