Spaghetti Carbonara

Egg is composed of shell, albumen (white) and yolk.  The ratio shell : albumen : yolk = 1:6:3.

Fresh eggs have a round raised shape.  The color of yolk is depend on feed; the canges to yellow if feeded the corn, and to whity if feeded the rice.

This White string is a chalaza which fixes the egg yolk in the center of the egg.
The chalaza are two spiral bands of tissue that suspend the yolk in the center of the white (the albumen) and  its component is the same protein with albumen and includes 1% of  sialic acid.
