“Sawara” Saute with Ginger Garlic Sauce

Sawara is a Japanese Spanish Mackerel, Scomberomorus niphonius.

We group fishes into 2 types, “Akami” and “Shiromi”.
Akami is a red-fleshed fish (tuna, bonito, etc), and Shiromi is a white-fleshed fish (sole, porgy,  seaperch, etc.)

Sawara ; Japanese Spanish Mackerel (Scomberomorus niphonius)  It is often treated as Shiromi, but it is a member of Akami according to the component.

The difference between Akami and Shiromi is contained amount of hemoglobin and myoglobin.  Akami contains them more than 10mg per 100g.

"Sawara" Saute with Ginger Garlic Sauce
Ginger garlic Sauce’s ingredeints : finely-chopped ginger, garlic, green long onion and red pepper, rice vinegar, sesame oil, soy sauce and sugar.

・Sawara
is a  Japanese Spanish Mackerel, Scomberomorus niphonius.  鰆(さわら) literally “spring fish”
・Shoga
is a ginger (Zingiber officinale).  生姜(しょうが) literally “fresh ginger”
・Ninniku
is a garlic.  大蒜(にんにく) literally “big allium grayi”
・Shiro-Negi
is a green long onion.  白葱(しろねぎ) literally “white onion”
・To-Garashi
is a red pepper.  唐辛子(とうがらし) literally “Chinese pepper”
・Kome-Zu
is a rice vinegar.  米酢(こめず) literally “rice vinegar”
・Goma-Abura
is a sesame oil.  胡麻油(ごまあぶら) literally “sesame oil”  * 油 menings oil
・Shoyu
is a soy sauce.  醤油(しょうゆ)
・Sato
is a sugar.  砂糖(さとう)  literally “sand sugar”
