Chaliapin Steak – “Yoshoku” cooking –

Chaliapin Steak was named after Feodor Chaliapin, a Russian opera singer.

Chaliapin Steak is known a kind of Yoshoku.  In 1936 a chef of Teikoku Hotel (Imperial Hotel) in Tokyo devised a way to cook a steak to be extra tender for Chaliapin, who was suffering from a toothache.

In that recipe, a steak is sauted after marinated in grated onion which is protease-containing.   Proteolytic enzymes makes meat extra tender.
