Grilled Salted “Kamasu” Japanese Barracuda

“Kamasu” is similar to the shuttle weaving in shape.

Japanese barracuda (Sphyraenidae) is called “Kamasu”, that is written “梭子魚” or “梭魚” literally “shuttle weaving fish”.

Kamasu is “Kamasu” is mandibular prognathism and it has sharp teeth.  There are two large teeth at the upper jaw and one large teeth at the lower jaw in center, additionally there are many short teeth towards the back at both jaw.

I don’t know the reason is for that it caches the overhead fish (prey) from the lower side.

Today’s “Kamasu” is “Himono”.  “Himono” is lightly salted and dried through sun, wind, night air, etc.
Himono is seen well at any supermarket and fish types is rich.
