Mixed Rice with “Unagi no Kabayaki”

This is one of my favorite “Maze-Gohan”.

“Maze-Gohan” is cooked rice mixed with some ingredients.  It is distinct from “Takikomi-Gohan”.
What is the difference?

“Maze-Gohan” is mixed the cook up rice and ingredients, and “Takikomi-Gohan” is cooked with ingredients.  This is a kind of “Maze-Gohan”.

In this recipe the eel is leading role, and the great supporters are “Mi-Zansho” fruits of Japanese pepper, “Mioga” Japanese mioga ginger and “Ao-Jiso” green perilla.
Unagi-Kabayaki
Grilled eel with dipping “Tare” sauce.  It is called “Unagi no Kabayaki”.

After warming “Unagi no Kabayaki”, mix freshly cooked rice and all ingredients.

・Maze-Gohan
is mix rice with some ingredients, the point is mix the cooked rice.  混ぜご飯  literally “mixed rice”
・Takikomi-Gohan
is mix rice with some ingredients, the point is cooked with ingredients.  炊き込みご飯(たきこみごはん) literally “cook with rice”
・Unagi
is an eel.  鰻(うなぎ) literally “gloss and long fish”
・Kabayaki
usually refers to the eel, which are split and broiled over a charcoal fire after being dipped in soy sauce-based special sauce.  蒲焼(かばやき) literally “Typha latifolia grill”
・Mi-Zansyo
is a fruit of Japanese pepper “Sansho” (Zanthoxylum piperitum).  実山椒(みざんしょう) literally “fruit mountain Japanese pepper”
・Mioga / Myoga
is a Mioga ginger, Zingiber mioga.  I feel the early summer to the scent of mioga.  茗荷(みょうが) literally uncertain, there are some story in its origin.
・Ao-Jiso
is a green perilla (Perilla frutescens var. crispa).  青紫蘇(あおじそ) literally “blue purple resuscitation”
