Shijimi Clam Miso Soup

“Shijimi” is a Corbiculidae, which is small clam that lives in freshwater or brackish.

Japanese domestic species are three.
– Yamato-Sijimi in brackish
– Ma-Shijimi in freshwater
– Seta-Shijimi in freshwater

These are “Yamato-Shijimi” from the lake Abashiri, Hokkaido, where fishing season is from May to October.

There the only adult shellfish over 12mm are available to be caught.

“Shijimi” clams contain ornithine, which is an amino acid that removes liver toxins.

 

Boil “Shijimi” slowly from the water, remove foam.

Finally, add miso.  I recommend using “Aka-Miso”, which is a variety of miso and the color is dark brown.

is a dark brown miso.  The representative aka-miso is “Haccho-Miso 八丁味噌” of Aichi pref.  赤味噌(あかみそ) literally “red miso”
