Tomato Salad with “Shiso” Dressing

“Ao-Jiso” is one of the most popular Japanese fresh herbs.

Perilla frutescens var. crispa is called “Shiso” in Japanese, which is a member of the mint family.  There are two types, the green “Ao-Jiso” and the red “Aka-Jiso”.
– “Aka-Jiso”is used mostly to give their color to “Umeboshi” and “Beni-Shoga”.
– “Ao-Jiso” has many uses at table.

The green leaves have a unique flavor, which component is a perillaldehyde.  It accounts for about 50 percent of “Shiso” essential oil .
Suffice it to say that they have a hint of basil and spearmint.

Ao-Jiso dressing’s ingredients : finely shredded Ao-Jiso, finely chopped onion, olive oil, rice vinegar and salt.
