Salt-Grilled Sardin of Hokkaido

Plump and fat sardines from Hokkaido (north region of Japan), where is just in season!

These are “Ma-Iwashi” Sardinops melanostictus, written “真鰯” in Kanji literally “genuine delicate fish”.
Also it’s called “Nanatsu-Boshi” “七つ星” literally “seven stars”, because seven black spots are lined up in a row in the body.  But these dose not have seven spots exactly.

Salt fat thick sardines, and grill them in oven.

Lady Murasaki (Murasaki Shikibu), who was a Japanese novelist during the Heian period, loved Salt-Grilled Sardin.
Aristocracy at that time was not able to eat sardines, and so she ate grilled sardines in secret to her husband. :)
