Oden with “Chikuwabu”
Oden is a hodgepodge in dashi soup. Although it is a representative of winter dish, recently it is sold all year round at a convenience store.
Ingredients of “Oden” vary according to region and between each household. The differences between Kanto region and Kansai region are remarkable. One of them is “Chikuwa-Bu”. In Kanto region “Chikuwa-Bu” is indispensable, but in Kansai region it is rarely used.
“Chikuwabu” is very similar to “Nama-Fu” wheat gluten food and “Chikuwabu” contains not only wheat gluten but also starch.
You may has heard “Chikuwa” of fish paste cake, but it is absolutely different.
