Grilled Sea Bream

How to cut open fish? There are two styles.

This sea bream is cut and opened without cutting the skin of abdomen.  This style is called “Se-Biraki”, written “背開き” in Kanji literally “back open”.  If abdomen open and without cutting the skin of back, it is called “Hara-Biraki”, written “腹開き” literally “abdomen open”.

The shape of roundness looks like a family crest.  But the fish was hardly used as the motif of family crest except the carp.
