Simmered “Okara” Soy Pulp

“Okara” is a bran of soybeans filtered out of the soy milk in the process of making tofu.

Okara is a by-product of tofu.  The amount becomes 1.35 times the dry soybeans used!

Okara is so inexpensive , it has been popular since the Edo era as the food of the common people.

But under the influence of dietary changes, the consumption has been significantly reduced.  Now regrettably it is positioned as “industrial waste” rather than food, by the determination of justice “Okara-Saiban” in 1999.

Fry the other ingredients in pan
Add Okara
Pour dashi broth, seasoned with soy sauce and sugar.
Simmer them until slightly reduced.
