Simmered “Sanma” Pacific Saury with Umeboshi
Saury is a representative fish of autumn in Japan.
Pacific saury (Cololabis saira) is called “Sanma”, which is written “秋刀魚” in Kanji, literally “autumn Japanese sword fish”.
Sanma has a cute little mouth and lower jaw is protruding from the upper jaw. If it is fresh, a tip of the upper jaw is yellow.
September is the peak production season of Saury fishing in Hokkaido east area. After then, saury will come down to the south around the Tohoku area and spawn.
