Fried “Sawara” with Ginger Garlic Sauce

Sawara is a Japanese Spanish Mackerel.

Japanese Spanish Mackerel (Scomberomorus niphonius) is callled “Sawara” in Japanese, which is written “” in Kanji literally “spring fish”.

This fish has various name, the name is changing depending on the stage of growth.
– fron 40 to 50 cm in size (about 12 month)    “Sagoshi” “Sagochi”
– from 50 to 60 cm   “Nagi”
– over 60cm (older than 24 month old)   “Sawara”

The fish that is going to change the name along the growth is called “Shusse-Uo”, which is written “出世魚” in Kanji, literally “successful career fish”.
They are treated as a fish of good fortune.  In addition to the “Sawara”, “Buri”(amberjack, Seriola quinqueradiata) and “Suzuki” (Lateolabrax japonicus) are also “Shusse-Uo”.
