Roast Chicken Leg with Sprout Garlic

They are germinated the clove of garlic.

Sprout garlic smell more gently than usual, and remained less after eating.  In Fukushima Prefecture it is known as “Mego-Ninniku”.

The smell of garlic is caused by a sulfur compound called “allicin “.

Garlic dose not contain “allicin”,  but has “alliin” that is odorless.
Alliin is changed to “allicin” on contact with the air by the enzyme action of Alliinase.

Garlic has been avoided from the Buddhist priesthood because of this smell.

At the entrance of the Zen temple,  there is a stone engraved with “不許葷酒入山門” which means “non- permissible smelly vegetable (such as onion and garlic) and sake entering the main gate”.  (kunshu sanmon ni iru wo yurusazu, in Japanese pronunciation)
