Purple Top White Globe Turnip Salad
A variety of Japanese Purple Top is called “Ayame-Yuki”.
“Ayame-Yuki” was released in 2006 by Sakata Seed Corporation. Lately it is often seen at the supermarkets during winter.
“Ayame-Yuki” is written “あやめ雪” literally “iris snow” . Not only good-looking, but also its name is beautiful and even so lyric!!
Pink purple is derived from the anthocyanin.
- Keep the skin and cut into thin layers.
- Chop the green stems, and mix with olive oil, salt, pepper, vinegar (or lemon juice).
- Serve with coarsely torn lettuce.
