Purple Top White Globe Turnip Salad

A variety of Japanese Purple Top is called “Ayame-Yuki”.

“Ayame-Yuki” was released in 2006 by Sakata Seed Corporation.  Lately it is often seen at the supermarkets during winter.

“Ayame-Yuki” is written “あやめ雪” literally “iris snow” .    Not only good-looking, but also  its name is beautiful and even so lyric!!

Pink purple is derived from the anthocyanin.

It is an improved variety of small turnip, so it is silky and  juicy (no bitterness),  suitable for eating raw.

 

  1. Keep the skin and cut into thin layers.
  2. Chop the green stems, and mix with olive oil, salt, pepper, vinegar (or lemon juice).
  3. Serve with coarsely torn lettuce.
